Variation Ideas

  • Add brown sugar. The added sugar will make these cookies sweeter but will change the nutritional information on these cookies.

  • You can scoop the cookie mixture with a spoon but I prefer to use cookie scoops. It helps to make each cookie more uniform and saves time as well. Ifyou are still scooping cookies with two spoons, you really need to get yourself somestainless steel scoops!
  • Another tip is to use baking mats. These keep your cookies from burning on the bottom and they help them cook evenly. Plus, it saves you money by not having to use parchment paper all the time.
  • Make sure to use ripe bananas. The ripe bananas is what adds sweetness to these cookies. It’s best to wait until the bananas have small brown spots on them before using them in this recipe.

How to store?

I store any leftover cookies in a sealed container or zip lock bag at room temperature for up to 3-4 days.
If you prefer them warm, you can heat them in the microwave for 5-10 seconds before enjoying them. However, I love them at room temperature.
If you do heat them in the microwave, make sure not to overheat as they will get a bit rubbery when heated for too long.

What is the difference between quick oats and rolled oats?

Rolled oats and old fashioned oats are the same thing. Rolled oats are steamed oats that are rolled into flakes. Whereas, quick oats are rolled thinner and are more pieces which makes them cook quicker.

Either types of the oats are great for making a breakfast oatmeal. But rolled oats are the best for baking and the ones that we use in this cookie recipe.

  • Give the oatmeal a quick spin in a food processor or mixer, for about 1-2 seconds. Do NOT turn the oatmeal into a fine flour if you want your cookies to have a nice, crumbly texture. This process is important for your cookies to hold together.

  • Pour all of your ingredients in a large bowl and mix thoroughly.

  • Spoon preparation onto the lined baking sheet and mold the cookies with your fingers. I made 6 cookies, but you could make them smaller to make more.

  • Bake for 12 to 15 minutes or until golden brown.
