Happy New Year’s Eve, everyone!
I know we’re all busy planning our New Year’s parties and getting our resolutions ready for tomorrow. So today, I have a quick appetizer recipe to take care of any last minute plans.
Only 6 ingredients, this Easy Ranch Cheese Ball appetizer requires absolutely no cooking! Just mix all of the ingredients together, roll in pecans, and you’re ready to go.
For today’s post, I’m keeping it short and sweet! I’ve been really busy this week with celebrating the holidays, and spending time with family. My sister and her boyfriend are visiting from Florida, so we’ve been taking in all of the sites.
We spent Christmas at home with my parents, then visiting Andrew’s family for the second half of the day. On Sunday, we hosted a big family Christmas party at my parent’s house, which means Saturday was spent cooking (ahem – easy ranch cheeseball, anyone?).Monday we went ALL over the city, from China Town, to Central Park, to the Museum of Natural History, to my absolute favorite restaurant Nizza(great gluten free pasta!).
On Tuesday in Wednesday we spent the night in Atlantic City and had pretty much the best time ever. So today, we’re just lounging around until going to a friend’s New Year’s Eve party. I’ll be making my Crispy Oven Baked Garlic Parmesan Chicken Wings, one of my personal party favorites. But sometimes, I just don’t have enough time to make a dish like wings.
On those days, Easy Ranch Cheese Ball is my go-to.
How to Make Easy Ranch Cheese Ball
First, place 2 (8oz) blocks of cream cheese in a mixing bowl.
Pour in 1 (1 oz) package of Ranch Seasoning.
Along with 2 tbsp plain greek yogurt.
Then mix everything together until ingredients are well-combined.
It’ll look something like this.
Next, add the 1 1/2 cups shredded cheddar cheese.
And 1 cup shredded mozzarella cheese.
Mix everything together once more.
Next, lay a piece of plastic wrap on the table and pour out the cheese mixture onto it.
Close the plastic wrap around it and mold it into a ball shape.
It should look something like this.
Then place the 1 1/2 cup pecans into a bowl, and put the cheese ball in it.
I used the same bowl, but I washed it out first so the pecans wouldn’t have cheese on them. It just looks nicer.
Then, roll the ball around until it’s covered in pecans.
Then you’re done! It’s that easy!
Place cheese ball on a plate and surround with crackers, and serve.
