I love this freezer frittata recipe (with salsa and sausage) for so many reasons, but top of the list is that it packs so many flavors and is great for a make ahead family breakfast meal prep recipe! And, this is a wonderful gluten-free breakfast idea!

I love a good frittata recipe, they’re an easy baked egg dish that can easily be made ahead and they freeze/thaw really well. I always make my recipe for 5 ingredient vegetable frittata but was testing this new salsa and sausage frittata out, specifically seeing if it would be a good freezer meal breakfast (answer=YES!)

What ingredients do I need to make a freezer frittata?

  • Breakfast sausage – you can use your favorite breakfast sausage, but I like to use chicken breakfast sausage. You’ll use 8 total links.
  • Salsa – select a salsa that has a heat level of your liking. To ensure it is kid-friendly, I use a salsa that is a bit more mild. You don’t want to be too heavy-handed with this ingredient because it will mess with the liquid ratio, and you want your frittata to ‘set’ as it bakes.
  • Spinach – this is a great way to be able to sneak in vegetables without the kids really noticing!
  • Eggs – obviously, the base of this dish!
  • Milk/chives/salt – these ingredients will all be added together with the eggs to add a touch of flavor to the frittata. I like using chives instead of onions in frittatas because it’s a less harsh breakfast flavor.
  • Sharp cheddar – Using a sharp cheddar helps contrast the egg mixture. You can certainly get creative with what type of cheese you use. You could use a pepper jack or blend of other cheeses.

A frittata is just an Italian version of an omelet, and I have to say, they are so much easier to make, that they surpass omelets in my eyes any day of the week, no flipping or anything like that! They’re great for easy breakfasts.

I also like to make this frittata in the oven and then let it cool and slice it and wrap it in individual servings, because it’s great to just pop in the microwave and have a delicious breakfast ready to go two minutes later.

How do you make this freezer frittata?

  1. Preheat oven to 350. Spray baking dish with cooking spray.
  2. Laybreakfast sausage pieces into bottom of the baking dish, evenly distributed. Spoon salsa on top of sausages and add chopped spinach on top.
  3. In a bowl whisk together eggs, milk, chopped chives and salt. Pour egg mixture over spinach.
  4. Sprinkle cheddar cheese on top
  5. Bake for 35-40 minutes, or until just set in the center.
  6. Remove from oven, slice and enjoy.

Since the cook time is a little long for a breakfast dish, I always like to prepare this freezer frittata recipe (with salsa and sausage) ahead of time. To freeze:

  • Allow frittata to cool. Slice into pieces and cover entire baking dish with aluminum foil, or divide pieces into individual containers. Adhere a label to aluminum foil.

When you’re ready to enjoy this freezer frittata, simply remove a piece of frittata from the container and microwave on high for two minutes. Then rest for 30 seconds and enjoy!

This frittata is a great meal prep breakfast idea because you can put a slice in a divided container, add a serving of fruit and then a cut up piece of sourdough or wheat English muffin and you’re good to go!

Ingredients

  • 8 oz. breakfast sausage cooked fully, chopped
  • 1/2 cup chunky salsa heat level to your liking
  • 3 oz. spinach chopped (1/2 bag)
  • 8 eggs
  • 1/3 cup milk
  • 1 Tbs. dried chopped chives you can use dried parsley as a substitute
  • 1/2 tsp. salt
  • 1 cup sharp cheddar shredded
  • cooking spray

Instructions

Make now:

  • Preheat oven to 350.

  • Spray baking dish with cooking spray.

  • Lay breakfast sausage pieces into bottom of the baking dish, evenly distributed. Spoon salsa on top of sausages and add chopped spinach on top.

Freezing instructions:

  • Allow frittata to cool completely. Slice into pieces and cover entire baking dish with aluminum foil, or divide pieces into individual containers, or plastic wrap individual slices and put in a freezer storage bag. Adhere a label and freeze. Freeze for up to 2 months.

Warm from frozen:

  • To warm, remove a piece of frittata from aluminum foil or container, and microwave on HIGH for 2 minutes, then allow to rest for 30 seconds, then enjoy! Depending on your microwave, you may need to microwave for an additional 30 seconds or until warm throughout.

    This was really good! Used ground sausage instead – could use bacon too!! The salsa makes it a little bit different than other egg casseroles.
